Arugula and Watermelon Salad

I really like recipes that are healthy.  And tasty.  And easy to make with just a few ingredients.  And economical.  And a little different.  And popular with my family.  That's not too much to ask is it?


This recipe is all of the above.  It's a great one to throw into the rotation when the family starts getting a little tired of the same old salad at dinner.  Or those times when you want something that looks fancy, but you just don't feel like making a fuss.


Start with:
   4 cups of chopped arugula
   2 cups of seedless watermelon cut into 1/2" cubes.  
   4 ounces of crumbled feta cheese.

Using a blender, mix:
    1 minced shallot
    2 tablespoons citrus vinegar
    3 tablespoons olive oil
    1 teaspoon of honey, agave nectar or coconut nectar

Toss it all together and serve.

This is one of those dishes that everyone in my household knows to load up on in the first round because there won't be any seconds.

It's light and refreshing and perfect for warm weather... enjoy!

  2. Great flavor combinations. watermelon and feta are fantastic together, though I'd probably add a bit more shallot or even red onion for me. Have you ever tried watermelon and feta with berries and a poppyseed dressing? I added that to my blog earlier this year and it's a different flavor combination, but somewhat similar to this one.
